Our dear friend, Brittany Loyer, an amazing self-taught cook, has undertaken experimenting with Mana Organics tea, beyond the humble, though delicious, cup of chai.
Her second recipe (read her first here) is a rose petal and orange blossom Mizu shingen mochi with kinako and Mana Organics black tea syrup. Also known as a raindrop cake.
According to Brittany, “It's not really a cake at all, but a delicate dessert that instantly melts in your mouth. It's traditionally served flavorless with kinako (roasted soybean powder) and a sweet, dark syrup. I added a new twist with rose and orange blossom extract and Mana Organics CTC black tea syrup. Eat it quickly! You have 30 minutes until your raindrop disappears!”
1 cup mineral water
1/4 tsp agar-agar
3 drops orange blossom extract
3 drops rose extract
